Ingredients

  • 1 lb chicken, cut into pieces
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can coconut milk
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Steps

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and grated ginger, cooking for another minute.
  4. Add the chicken pieces and cook until browned on all sides.
  5. Sprinkle the curry powder over the chicken, mixing well.
  6. Pour in the coconut milk and stir to combine.
  7. Bring the mixture to a simmer, then reduce the heat and cover.
  8. Let it cook for 20-25 minutes until the chicken is cooked through.
  9. Season with salt to taste.
  10. Garnish with fresh cilantro before serving.
