Ingredients

  • 2 cups grated carrots
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Steps

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the grated carrots, sugar, and oil.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the carrot mixture and stir until well combined.
  6. Stir in the vanilla extract.
  7. Pour the batter into a greased cake pan.
  8. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool before serving.
