Croquetas

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup milk
  • 1/2 cup onion, finely chopped
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon nutmeg
  • Salt to taste
  • Pepper to taste
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Vegetable oil for frying

Steps

  1. In a skillet, heat some oil and sauté the onion until translucent.
  2. Add the flour and cook for a couple of minutes while stirring.
  3. Gradually add the milk, stirring continuously to avoid lumps.
  4. Add the shredded chicken, nutmeg, salt, and pepper. Cook until thick.
  5. Transfer the mixture to a bowl and let it cool in the refrigerator for at least 1 hour.
  6. Once chilled, shape the mixture into small cylinders or balls.
  7. Dip each croquette first in beaten eggs, then coat with breadcrumbs.
  8. Heat vegetable oil in a pan and fry the croquettes until golden brown.
  9. Remove from oil and place on paper towels to drain excess oil.
  10. Serve hot as appetizers or snacks.
