Croquetas
Delicious and crispy Spanish croquettes filled with a creamy mixture.

Ingredients
- 2 cups cooked chicken, shredded
- 1 cup milk
- 1/2 cup onion, finely chopped
- 1/4 cup all-purpose flour
- 1/4 teaspoon nutmeg
- Salt to taste
- Pepper to taste
- 1 cup breadcrumbs
- 2 eggs, beaten
- Vegetable oil for frying
Steps
- In a skillet, heat some oil and sauté the onion until translucent.
- Add the flour and cook for a couple of minutes while stirring.
- Gradually add the milk, stirring continuously to avoid lumps.
- Add the shredded chicken, nutmeg, salt, and pepper. Cook until thick.
- Transfer the mixture to a bowl and let it cool in the refrigerator for at least 1 hour.
- Once chilled, shape the mixture into small cylinders or balls.
- Dip each croquette first in beaten eggs, then coat with breadcrumbs.
- Heat vegetable oil in a pan and fry the croquettes until golden brown.
- Remove from oil and place on paper towels to drain excess oil.
- Serve hot as appetizers or snacks.
