Pasta Patate e Provola

Ingredients
- 400g pasta (short types like macaroni or ditalini)
- 300g potatoes (peeled and diced)
- 150g provola cheese (cubed)
- 1 onion (chopped)
- 100ml olive oil
- 1 liter vegetable broth
- Salt to taste
- Black pepper to taste
- Parmesan cheese (grated for serving)
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the diced potatoes and cook for about 5 minutes, stirring frequently.
- Pour in the vegetable broth and bring to a boil.
- Once boiling, add the pasta and cook until al dente, following package instructions.
- When the pasta is almost done, stir in the cubed provola cheese until melted.
- Season with salt and black pepper to taste.
- Serve hot, garnished with grated Parmesan cheese.
