Pasta Patate e Provola

Ingredients

  • 400g pasta (short types like macaroni or ditalini)
  • 300g potatoes (peeled and diced)
  • 150g provola cheese (cubed)
  • 1 onion (chopped)
  • 100ml olive oil
  • 1 liter vegetable broth
  • Salt to taste
  • Black pepper to taste
  • Parmesan cheese (grated for serving)

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the diced potatoes and cook for about 5 minutes, stirring frequently.
  4. Pour in the vegetable broth and bring to a boil.
  5. Once boiling, add the pasta and cook until al dente, following package instructions.
  6. When the pasta is almost done, stir in the cubed provola cheese until melted.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with grated Parmesan cheese.
