Avocado Salmon Salad

Ingredients
- 2 ripe avocados
- 200g fresh salmon fillet
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste
- Mixed greens (optional)
Steps
- Preheat the grill or pan over medium heat.
- Season the salmon fillet with salt and pepper.
- Cook the salmon for about 4-5 minutes on each side until cooked through.
- While the salmon is cooking, slice the avocados in half, remove the pit, and scoop the flesh into a bowl.
- Mash the avocado with olive oil, lemon juice, salt, and pepper until creamy.
- Once the salmon is cooked, flake it with a fork.
- Mix the flaked salmon with the avocado mixture.
- If using, serve the salad on a bed of mixed greens.
