Avocado Salmon Salad

Ingredients

  • 2 ripe avocados
  • 200g fresh salmon fillet
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste
  • Mixed greens (optional)

Steps

  1. Preheat the grill or pan over medium heat.
  2. Season the salmon fillet with salt and pepper.
  3. Cook the salmon for about 4-5 minutes on each side until cooked through.
  4. While the salmon is cooking, slice the avocados in half, remove the pit, and scoop the flesh into a bowl.
  5. Mash the avocado with olive oil, lemon juice, salt, and pepper until creamy.
  6. Once the salmon is cooked, flake it with a fork.
  7. Mix the flaked salmon with the avocado mixture.
  8. If using, serve the salad on a bed of mixed greens.
