Cachopo con Queso Brie
A delicious Spanish dish featuring two breaded meat fillets filled with creamy brie cheese.

Ingredients
- 2 large beef fillets
- 100g brie cheese
- 1 cup flour
- 2 eggs
- 1 cup breadcrumbs
- Salt to taste
- Pepper to taste
- Olive oil for frying
Steps
- Preheat the frying oil in a large pan.
- Season the beef fillets with salt and pepper.
- Place one beef fillet on a flat surface, top it with brie cheese, and cover with the second fillet.
- Dip the filled beef in flour, then beat eggs, and lastly coat with breadcrumbs.
- Fry the cachopo in the hot oil until golden brown on both sides, about 3-4 minutes per side.
- Remove from the pan and drain on paper towels.
- Cut into portions and serve hot.
